Buddah Bowl Dairy Free Dressing

Buddah Bowl's are easy to make ...you can pretty much add heaps of things and there are loads of ideas on the internet on different combinations you can create.
The dressing really brings a bowl together and nothing beats an easy to make homemade option!. This will last up to 4 days in the fridge.
INGREDIENTS:
1 cup raw cashews soaked
1 large garlic clove
2 tsp freshly chopped continental parsley
1/2 tsp fresh or dried dill
1 1/2 tsp onion powder
1 pitted date - medjool
1 Tblsp apple cider vinegar
1/2 tsp djion mustard
3/4 cup water
METHOD:
1. soak cashews in water for 3 hours or put in hot water and soak for 15-30 minutes. Drain in sieve ready to use.
2. Blend all ingredients together in a high speed blender until creamy. You may need to add a little more water. This dressing is not runny. It has a subtle flavour which is great as it compliments a bowl and doesn't overpower it.
