Avocado is a great super-food to incorporate into any meal. They're loaded with lots of nutrients which many are lacking in this modern day. This recipe is a great snack idea as not only is it delicious, its super healthy and filling.
Serves 1, Prep Time 7 mins (Calories 179, Fat 7.8, Protein 10.4, Carbohydrates 18.2, Fibre 3.7)
1 Tbsp Spicy tomato salsa
3 Brown rice cakes, thins (approx. 6g each)
1 Small tomato (approx. 100g each)
125 grams Cottage cheese (low fat)
Mash avocado with a fork until fairly smooth.
Dice tomato slices extremely finely and then mix with avocado.
Add a squeeze of fresh lemon juice to the avocado mixture.
Add salt and pepper to the avocado mixture to taste.
Place turkey or chicken (shaved) on the rice cakes.
Add avocado salsa to the rice cakes.
