The Perfect Soup for Winter Dinner
It has definitely been getting cooler and with the cooler weather comes soups.
Soups are an incredible way to create an easy meal that also packs a huge nutritional punch!

I LOVE this Pea & Ham Soup. It's easy to make, full of goodness and super tasty.
Better yet it can be easily frozen for future meals.
What you will need....
1 x bacon hock
1 x packet yellow split peas
1 x celery stick chopped
1 x large carrot chopped finely
1 x onion chopped finely
1.5 x litres of water
1 x tsp butter
The instructions....
In a big soup pot melt the butter and sauté the onion, celery and carrot until translucent.
Add the bacon hock, whole packet of split peas and water. Bring to the boil then simmer low for 1.5 hours stirring regularly.
Remove the bacon hock and chop the meat off the bone and into small pieces. Return the chopped meat into the soup and mix through.
As the soup cooks, the pea mixture turns into mush so you do not need to blend this at the end.
Ensure that you continue to stir regularly whilst cooking over a low heat to ensure that the ingredients are cooking evenly. Add water as needed at the end.
N.b. This soup should be a little runny...once saved in containers it will thicken up
again.
